Spanish Vegan Paella

This vegan paella has all the smoky flavour, vibrant colour and unique texture of the traditional Spanish dish – all powered by plants!

Ingredients

  • Bomba/Alborio rice - 70 g
  • Red pepper (diced) x 0.5
  • Onion (diced) x 0.25
  • Tomato (diced) x 0.5
  • Garlic clove (crushed) x 1
  • Paprika - 0.5 tsp
  • Turmeric - 0.5 tsp
  • Frozen peas - 20 g
  • Lemon (wedges) x 0.5
  • Vegetable stock - 225 ml
