Vegan Cassoulet

A healthier take on a hearty supper, this warm and comforting cassoulet is packed full of classic French flavours – without any of the meat!

Ingredients

  • White canned beans (drained/rinsed) - 100 g
  • Tempeh (½“ cubes) - 50 g
  • Onion (diced) x 0.25
  • Carrot (thinly sliced) x 0.25
  • Celery (diced) x 0.5
  • Garlic clove (minced) x 1
  • Mushrooms (sliced) x 4
  • Tomato (diced) x 0.5
  • Thyme - 0.5 tsp
  • Sage - 0.5 tsp
  • Parsley (chopped)
  • Red wine - 30 ml
