Vegan Chilli

Containing a rainbow of veggies and two types of heart-healthy bean, this vegan chilli has all the warm and smoky flavours of the meaty original – and more!

Ingredients

  • Cumin - 0.5 tsp
  • Onion (diced) x 0.25
  • Paprika smoked - 0.5 tsp
  • Carrot (peeled/chopped) x 0.5
  • Celery stick (chopped) x 0.5
  • Garlic clove (crushed) x 1
  • Chilli powder - 0.5 tsp
  • Sweet potato (small chunks) x 1
  • Tomato purée - 0.5 tsp
  • Red pepper (cut into chunks) x 0.5
  • Tinned tomatoes (chopped) - 200 g
  • Kidney beans (drained) - 100 g
  • Black beans (drained) - 100 g
  • Basmati rice - 70 g
