A healthier take on jacket potato, nutritious sweet potatoes are loaded up with heart-healthy beans, delicious creamy guacamole and sour cream for the perfect weeknight dinner.

  • Kidney beans (drained/rinsed) - 100 g
  • Avocado (lrg) x 0.5
  • Red onion (diced) x 0.25
  • Cumin - 0.5 tsp
  • Red chilli (deseeded/sliced) x 0.5
  • Tomato (diced) x 1
  • Lime (½ juice & ½ wedges) x 0.5
  • Coriander leaves (chopped)
  • Soured cream (optional) - 40 ml
