Greek Feta Frittata & Garlic Red Potatoes

Traditional Greek flavours come together with deliciously fresh tomatoes, courgettes and herbs, creating a quick & easy dish that can be enjoyed warm or cold.

Ingredients

  • Red potatoes (cut into 2” chunks) - 200 g
  • Courgette (thinly sliced) x 1
  • Tomatoes (ripe & chopped) x 2
  • Garlic powder - 0.5 tsp
  • Garlic clove (crushed) x 1
  • Eggs x 4
  • Feta (crumbled) - 50 g
  • Dill (finely chopped) - 0.5 tsp
  • Lemon (wedges) x 0.25
