Miso Aubergine & Brown Rice

Succulent aubergine is dressed up with a sweet and sticky miso marinade and served over nutty brown rice for a simple meal you can enjoy on any day of the week.

  • Aubergine (halved lengthways) x 1
  • Miso paste - 1 tbsp
  • Soy sauce - 0.5 tbsp
  • Honey/Maple syrup - 0.5 tbsp
  • Brown rice - 70 g
  • Mirin - 0.5 tbsp
  • Lime (zest/juice/wedge/s) x 0.5
  • Cucumber (thinly sliced) x 0.25
  • Spring onion (thinly chopped) x 1
  • Red chilli (deseeded/thinly chopped) x 1
