Satay Sweet Potato Curry

  • Garlic clove (crushed) x 1
  • Ginger x 0.25
  • Peanut butter smooth - 0.5 tsp
  • Coconut milk - 100 ml
  • Spinach - 50 g
  • Sweet potato (peeled) x 1
  • Lime (juice) x 0.5
  • Basmati rice - 70 g
