Vegan Lo Mein

Made with an easy homemade sauce that packs incredible Asian flavour, these stir fry noodles are an easy, satisfying fix for food cravings.

Ingredients

  • Udon noodles (dried) - 50 g
  • Carrot (sliced) x 0.5
  • Garlic clove (crushed) x 1
  • Red pepper (sliced) x 0.5
  • Leek (white part in strips) x 0.5
  • Chilli sauce - 0.5 tsp
  • Spinach (handful) x 1
  • Cornflour - 0.5 tbsp
  • Ground ginger - 0.25 tsp
  • Lime juice - 0.5 tbsp
  • Shitake mushrooms (sliced) - 60 g
  • Soy sauce - 1 tbsp
  • Vegetable stock - 50 ml
  • Brown sugar - 0.5 tsp

  • Vegetable stock - 100 ml
  • Brown sugar - 1 tsp
