Vegan Pad Thai

Classic pad Thai flavour with a slight fiery kick – this dish is made vegan with tasty tofu and a host of colourful veggies.

Ingredients

  • Pad Thai noodles (dried) - 50 g
  • Tofu (drained) - 100 g
  • Garlic clove (crushed) x 1
  • Red pepper (sliced) x 0.5
  • Turmeric - 0.25 tsp
  • Spring onion (chopped) x 1
  • Carrot (grated) x 0.5
  • Beansprouts - 25 g
  • Lime (½ juice & ½ wedges) x 0.5
  • Dry roasted peanuts (handful - chopped)
  • Soy sauce - 0.5 tbsp
  • Vegetable stock - 50 ml
  • Sugar - 0.5 tbsp
