Vegetable Risotto

Creamy, comforting & ridiculously easy. This vegan-friendly risotto recipe has a hint of fiery chilli for a warming, spicy kick.

Ingredients

  • Risotto rice - 70 g
  • White wine (optional) - 25 ml
  • Carrot (diced) x 0.5
  • Onion (diced) x 0.25
  • Celery stick (chopped) x 0.5
  • Garlic clove (crushed) x 1
  • Vegetable stock - 250 ml
  • Chilli flakes - 0.25 tsp
  • Lemon (zest) x 0.25
  • Parsley (optional)
